Raw Vegan Burrito


Walnut “Meat”

1 cup raw walnuts

1 Tbsp. Liquid Aminos

1/4 tsp. ground chipotle pepper

1 tsp. ground cumin

1 tsp. extra virgin olive oil -process in food processor & set aside

Cashew Cream

½ cup raw cashews

juice of ½ lemon

1 tsp. apple cider vinegar

5 Tbsp. water -mix in blender and set aside

Salsa

1 cup chopped cherry tomatoes

½ yellow bell pepper

½ red onion

¼ cup chopped cilantro

½ clove garlic

juice of ½ lime

1 tsp. raw honey

1 Tbsp. extra virgin olive oil

pinch of sea salt -chop all ingredients and combine

Other Items:

Avocado or guacamole

Swiss Chard leaves for wrapping

Pick out a nice big chard leave, rub with a little olive oil and chop off stem. Put a few scoops of each of your ingredients, wrap & enjoy!!
