15-Minute Jackfruit Tacos
I am obsessed with tacos!!!! I just love how tasty they are and how simple they are to prepare. The other day I was shopping at Trader Joes and decided to make some jackfruit tacos. I noticed that they had canned jackfruit which made me a little hesitant at first because I’m not a huge fan of canned foods but I was like what the hell, I’ll try it out…..and the results were great!!! Jackfruit can be found fresh or packaged. The fresh fruit is huge but some stores do sell it chopped into smaller pieces. The already seasoned and packaged jackfruit can be found in health food stores or in the area of supermarkets where they have faux meat and faux cheese. Jackfruit has the texture of a pulled pork or pulled chicken and takes on the flavor of the seasonings or sauces that you use. Jackfruit improves your mood, lowers your risk of heart disease and decreases body fat!!
This particular meal was not all from scratch but when you want something fast this is the dish for you!
1 can of jackfruit (yields about 4 tacos)
Drain jackfruit and shred into smaller pieces.
Heat up skillet with olive oil and spread jackfruit around evenly.
Season jackfruit with taco seasoning. I used a ready-made taco seasoning but you can make your own with chili powder, garlic, paprika, cumin and sea salt.
Sauté for 7-10 minutes.
Warm your taco shells.
Assemble your tacos.
The toppings are up to you but to keep this simple I used tomato salsa, store bought guacamole (I couldn’t find a ripe avocado to save my life) if you have better luck than I did you can whip up your own homemade guac. I chopped up some jalapenos and cilantro and topped it off with sriracha!!! Enjoy!!
