Awesome Vegan Chickpea Omelette

Eggs were really never my thing before I became vegan. I liked scrambled eggs once in awhile but that was it. So giving up eggs wasn't a big deal at all for me once I became vegan.

Having a quick tofu scramble has been my substitute for years if I wanted a savory side with my vegan pancakes but this alternative will leave the tofu scramble in the dust.

Not only is this a quick recipe but it is super nutritious! Garbanzo beans aka chickpeas are a great source of protein, fiber, potassium and iron. They support weight loss, protect against heart disease and improve gut health.

Below you will find an amazing chickpea omelette recipe:

Prep Time: 10 mins.

Cook Time: 5 mins.

Yields: 2 chickpea omelettes

Ingredients for the chickpea batter:

  • 3/4 cup chickpea flour

  • 3/4 cup almond milk

  • 2 T apple cider vinegar

  • 2 t nutritional yeast

  • 1/4 t turmeric

  • 1/4 t garlic powder

  • 1/4 t onion powder

  • 1/4 baking soda

  • salt to taste

Stuffing Options:

  • 1/4 chopped red onion

  • handful of spinach

  • 1/2 cup chopped mushrooms

  • 1/4 cup chopped tomatoes

  • 1/4 cup broccoli florets

  • other veggies that you like


  1. Whisk together all of the batter ingredients. It should look like a pancake batter.

  2. Heat a nonstick pan and saute all stuffing ingredients. You can get creative and put whatever you want into this omelette. Set aside once done.

  3. Add some olive oil to the pan and pour half of the batter into the pan. Cook for a few minutes. Wait until it bubbles and add in stuffing ingredients.

  4. Gently fold over and cook it for another minute.

  5. Garnish and salt to taste.
